What's the best way to spend an afternoon in Edinburgh?

Do you want to sightsee or relax? If sightsee, go to the castle and then wander through old town. If relax, take a hike up and around Arthur's Seat, stop near the old church ruins and have a picnic lunch & read a good book, end the day with a good pint at the pub.
For the lunch, you can get some great food at the sandwich shop on High Street near Blackfriars. Pubs - Canon's Gait has a nice quiet feel with live music often at night or possibly Finnegans Wake on Victoria St for something livelier, Jeykll & Hyde is a nice pub futher off the royal mile but a little more touristy (lots of surprises to be found here).

Has to be the Castle followed by a trip down the old town.
For me it would be finding a way to stay there for much longer than an afternoon, but I'm sure someone who knows the place well will come along and give you some ideas (just leave the question open for a couple of days!). I'd be interested to see what they have to say about such a beautiful city.
Spend the afternoon in the castle if you haven't been and wander down the Royal Mile. Alternatively, head towards Rose Street (runs parallel to Princes Street) and sit in the bars and restaurants.
Depends what you've seen and done on previous visits, i try and see a bit more every time i go. It's a fabulous city.

If I had but one afternoon, I'd get a Lothian day ticket (2.30 GBP) so I could hop on/off at leisure. The tour buses are cool too, but more expensive, and they don't go everywhere. First, I'd be off to Arthurs Seat to walk halfway up and look out across town. It's fantastic to be out in the wild, in town.. Then I'd have a coffee at the Bean Scene near the Parliament, as it's got the most relaxed atmosphere and fantastic coffee. After that, a walk up the Royal Mile.. Perhaps a visit to the Castle would be cool but it'd take hours, so a visit to one of the galleries just off Princes Street would be better. They're free too. Of course I'd pop into Jenners and look around a bit for some shopping, before going down to Waverley and taking a train back, or a bus to the airport.
But it all depends on what tickles your fancy. If it's the buidings and parks you like to see, do go into the New Town, grab a bus to Stockbridge, walk alongside Leith Water and visit Cramond for a great view on the Firth of Forth and the bridge. If it's culture that you crave, visit the galleries on Princes St and Queen St, the Museum of Scotland near Greyfriars, the Writer's museum just off the Mile, or Our Dynamic Earth by the Parliament. They're all excellent, but you have just a few hours.

Take an open top bus tour and then do a pub crawl up the Royal Mile
Take a wander around the streets near hte castle and look in all the nic nac and tacky shops then get something to eat in a nice restaurant

All depends on if you are taking family. i.e Zoo,Castle of Hollyrood Palace.
Free are Museum of Childhood, Royal Scottish Musuem or Botanic Gardens.

The only way to spend the afternoon is going to Easter Road and watching the mighty Hi-bees then going into one of the many pubs close by and talking about another great victory over hearts.
