I've just had a week 5* all inclusive for 400 less than the brochure price, and they upgraded our room!
What I would personally have done (as you are probably well on your way somewhere now) is go to something like www.moneysavingexpert.com/flig. and found the cheapest deal I could to somewhere that took my fancy. I'd then go on www.priceline.co.uk and bag myself a cheap hotel.
Last minute booking is never that cheap unless you are not choosy about where you go. If you know where you want to go the best thing is to book as early as possible. Otherwise you're getting a load of leftovers! Many airlines (Ryanair etc) actually get more expensive not less as it gets closer dpeature time - logic being you're more desperate so more ready to fly.
last minute.com can be good but teletext is better if you ask me.
