Is it possible to just go down to Exmoor and camp somewhere?

It's probably National trust land so not strictly speaking allowed but could I just go find a secluded spot for the night?

You'll have to find a proper camp site. Exmoor is national park land also lots of it owned by Natl Trust. Also a lot of land is owned by farmers who will take a dim view of anyone plonking their tent down on their land.
Go to the libary and check the AA Camping guide. The campsites are good value and you can have a wash
