I want to live in Tibet with the monks and learn martial arts. Does anyone know how I would go about this?

I think your local martial arts association would have info on study in the East. Try them out on the local level because if you are going to make this level of investment then you need to know you are getting all of your hopes fulfilled.
Why bother travelling all that way when you could simply make your way to Lancashire. This is where the Martial Art of Ecky Thump derives from, and remember the old Yorkshire saying;
If things do'nt alter they'll stay as they are.
You may have a bit of trouble fulfilling this one. Tibet has been overrun by the Communist Chinese for some time now. Getting their permission to go into there is problematic at best, as they wish nothing good for the monks ( or anyone else) there.

Are you sure Tibetan monks practise martial arts? I read a lot about them in the 1970s and martial arts were never mentioned although they practised a form of martial art around 500 AD called Nonaraku which is thought to have given rise to Ju-Jitsu. But their teachings and practices today seem to be ascetic Buddhism, mind-control and out-of-body activities such as the Third Eye (mind reading), astral travelling (out of body experiences), etc. See first and third links below.
If you have established that they still practise martial arts, you should also read before going there about the occupation of Tibet by China. See link 2 below. The Tibetans'spiritual leader, the Dalai Lama, lives in exile in Dharamsala, India. perhaps a visit to his community there would be worthwhile. Then you could ask about life as a monk.
