Airport stores will accept U.S dollars , anywhere else and you will have to use the local currency.
Have you thought about getting the money changed before heading overseas ? you can usually get a better rate at home
change at a bank when u r there, suggest HKSB, dont try and buy stuff with US$, you will be overcharged.
Be careful what u buy, there arent many real bargains and u can get ripped off, a classic is buying a camera, doing the deal over the counter, but they put a cheaper model into the box that is so nicely wrapped and sealed for you
there are lots of foreign exchange counters in hk. specially in the kowloon area. just be mindful of the exchange rates. another thing you can do is use your atm to withdraw money. if your bank is a cirrus or maestro member, you can just withdraw in any atm with that logo. the machines will give you money in the local currency at bank rates.
Hengsang Bank always has good exchange rate in US Dollars.
My recommendation is to use ATM card. If you have a bank ATM card from your home country, then most likely you can use in the various ATMs in Hong Kong. ATMs are everywhere and that is probably the best way to manage your currency needs. No need to search for exchange places, etc.
Plus you will get most likely the bank rates of exchange as banks usually pool transactions for the day (from what I understand).
