They probably want to know how easily you adapt to changes in your environment, how willing you are to change your routine in order to compromise such that all parties involved in a situation are most comfortable.
Give them an example of how you have been influenced to change your routine or your views/perspective in order to benefit the comfort of a loved one, or how you have coped and faired during a time of trial/hardship or upheaval, for example.

Flexibility in this context means your ability to deal with change, or be flexible. If something in your life just suddenly changes, do you get upset or just deal with it. That is a question only you can answer.

Flexibility refers to the ability to easily bend an object or the ability to adapt to different circumstances. Flexibility is used as a term and measurement in many different sciences.
In fitness, health and sports, flexibility has a different meaning. Flexibility is the ability of your muscles, tendons and ligaments to stretch which allow your joints to have a larger range of movement. This component is important to avoid injuries during leisure activities. Good tests of flexibilty include the sit and reach test and touching your hands behind your back.
Examples of flexibility might be where you have had to change your plans at the last minute, reacted well in an unexpected situation, supported others when they've had unexpected pressures and news, generally referring to short timescales.
Hope that helps.
They're probably asking you to guage how you will react and cope with being up at 3 in the morning with some unruly kids because it's probably going to happen! Good luck.
