The Star Ferry tour of HK Harbor is nice. If I wanted to go off the beaten track, I would just buy an Octopus Card and set out on my own with a travel guide to HK and a map. Octopus Card is good on trains, subways, buses, 7-11's, etc.
There is a cool tour you can book at different tour desks that takes you to Lan Tao island. That is the island with a enormous Buddha statue on top of a hill and a monastery near by.
The tour goes via boat and bus. You see a lot of scenery, go by different islands, etc.
You will normally have lunch at the Trappist monk monastery near the Buddha statue with other families, often Chinese, at big community tables where they serve tasty, authentic food that has been cooked by the monks for centuries. All in all a really good tour, great photo opportunities and interesting experiences.
Just ask for the tour to Lan Tao/ the Buddha statue tour - and it should be easy to identify an operator. Hotel pick up can usually be arranged.
Take the ferry across the Pearl River to Guangzhou, and have a look in front window of the She Can snake restaurant! I couldn't advise actually going in unless you really fancy snake and/or have a strong stomach!

I would not use organised tours as local travel is so easy and cheap, the trip to Lantau is a good example. The ferry costs HK$22 -less than £1.50 each way and there is a direct local bus No 2 to the Buddha (around £1). Also visit the fishing village Tai O around $6 by bus from the Buddha.
Not off the beaten track but a great change is a day trip to Macau. You will need your passport and officially leave HK and go though immigration at Macau - which took us around 1 hour. The ferry costs $150 each way and takes around 55 minutes from Kowloon China City Ferry Terminal. Macaua was a Portugese colony and the architecture is very different, much more laid back than HK. Bus No 7 from ferry takes you into the town centre for aroud $4 - official tours are very expensive in comparison but still cheap by UK prices
You can use HK dollars in Macua but will get change in their own currenvcy, the units are worth the same but changing macau dollars back into HK$ you get around 90 HK$ per 100 Macau$.
Everyone is so helpful, taxis and buses are really cheap and local transport very frequent, one tip is that all buses require you to pay the exact fare on entry, no change given. You can use notes but keep plenty of coins in your pocket. If stuck do not panic as the drivers usually wave you past the fare machine if you hold up a large note and ask for change - they really are that friendly.
oh. so many places are worthy going~
only recommend one here - the ocean park ( much better than the disneyland)
