The term specialist holiday relates to any holiday that doesn't really fit into your 'bog standard package holiday' where you would get your flight, transfer at the airport, hotel accom, representative service, etc etc.
Most large tour operators have a specialist holidays divison like the one I work for. Check out the link below and this might give you a clearer Idea of what they are (and they are great fun as well!!!)
