I am afraid there is not much to do in Folkestone. There are a couple of hotels that have restaurants that are alright. Restaurants in England are a lot more expensive than in France and it is feasible to go through the Channel Tunnel to eat an evening meal in France.
Dover, ten miles away, is even more of a dump than Folkestone, but Dover Castle has lots to see, including a Roman lighthouse, a Norman keep and the underground rooms used as a command centre in World War II. There is also an interesting museum in the main square at Dover with the oldest preserved seagoing boat in the world.
If you have time, Canterbury is about twenty miles away and the obvious thing to see is the Cathedral. It has a Farmers Market, next to Canterbury West station, which has a good restaurant. Also, if you go from Folkestone to Hythe (a nice little town), there is a road, the B2068, to Canterbury that goes past a village called Lower Hardes (about five miles before Canterbury) that has a pub called the Granville (on the right if you are coming from Folkestone) that has very good food. Thinking about this, the Granville is a Shepherd Neame pub. They have a website http://www.shepherd.neame.co.uk/pubs. that lists their inns in Kent (also London). From this, they have a pub in Sandgate, just outside Folkestone, called The Clarendon that looks worth a try for food and atmosphere.
There is nothing, sorry about that. Your best bet is to pop along to Dover and get a boat to France.
