Usually not too much, they will both be in economy class but the codes are related to the fare type you have booked, eg advance purchase, budget fare, etc. Each airline uses different codes anyway.
depends which airline, they all have different booking class codes related to revenue..even in the same cabin there can be 10 bookings classes, depending on what you have paid, and wen you want to book and pay for your tkt.
There is no difference to you, really, in that you will sit in the same seat regardless of whether you have an O or a V class ticket.

The letters refer to the fare you've paid and the restrictions on it. As mentioned above, there are various booking classes used by airlines which indicate the level of flexibility a certain fare has. It varies from airline to airline which ones they use but for most Y is a fully changeable/refundable ticket and V/O would a non-refundable and either non-changeable or changeable-for-a-fee ticket.

The difference between O and V with the airline I work for is that V is usually a 'published' fare which means it can be bought by the public from any vendor/agent whereas O is usually for 'private' fares which are usually used for special deal tickets for sale to certain groups of people only or through certain travel agents only (for example, corporate travel agents).

As I said at the beginning though, ultimately it doesn't make any difference to where you sit on the aircraft, and the letters are merely there to reflect the fare & fare rules that apply to the ticket you have purchased.
