Often depends on airline, but be careful BA who are nearly worst major airline with 31 inches do not guarantee that all seats recline. I suffered a 9 hour journey to Miami with around 26 inch pitch only, as the seat backed up to bulkhead so that when the seat in front was reclined by 5 inches as claimed by BA, it was taken from my allowance. BA's customer service department reaction was to get lost, they don't guarantee that all seats get 5 inch recline' nor will compensate nor will warn passengers at time of booking.
A boeing 747-400 can hold 313 passengers in Economy, 80 in Bunsiness and 23 in First, but it can change slightly depending on what an airline wants.
When the airline orders the plane from Boeing, there are some possible configurations possible. Boeing site lists the default configuration which was mentioned above. It is even possible to order the plane without first class (all are economy class seats). As someone said, that pretty much depends on the airline.
The seating in steerage isn't too bad, as long as you don't mind having your kneecaps up your nose for 14 hours.

If you can get a bulk head seat thats really helpful because you get a lot more leg space and no one in front of you.
I never have a problem with virgin jumbo! best seat for me is doubles in the tail, especially if your a large person
