In general, flights to to Western US from Europe will be to the South of Iceland but will probably hit Greenland (due to the Great Circle routing) but it isn't guaranteed and depends upon the location of the jetstream each day which determines the North Atlantic track system. On one day, the 'tracks' which the aircraft will fly may be further North and on a different day they may more Southerly.
I'd say that you probably have a good chance of seeing Greenland but probably not Iceland.
Have a look at the link I've provided and type in MAN-LAS and it will show you the Great Circle routing.
I wouldnt have thought so, goes over the southern part of Greenland and on to the great lakes and right down the middle of the U.S into Vegas. We went with Airtours and I think thats the way it went
